BLUEBERRY JERK ROASTED PORK TENDERLOIN
1 ½ pints fresh blueberries
½ small white onion, chopped
2 green onions, chopped, divided use
1 cup water
4 tsp dry jerk seasoning, divided use
4 tbsp brown sugar
1/8 tsp salt
1 ½ lb pork tenderloin
1 tbsp extra virgin olive oil
1. In a medium pot, combine blueberries, onion, 1 green onion, water, 3 tsp of jerk seasoning, brown sugar and salt. Bring to a boil over high heat, and then reduce heat to medium-low. Let simmer for 20 minutes, stirring occasionally.
2. Preheat oven to 425 degrees. Rub pork tenderloin with olive oil and remaining tsp of jerk seasoning. Place in a baking dish.
3. When the sauce is done, pour about half of it onto the pork tenderloin. Reserve the remaining sauce. Place pork in oven and roast for 10 minutes, then flip over and let roast again until the internal temperature is 155 degrees, about 15 more minutes.
4. Let rest for about 10 minutes. Slice and serve with reserved sauce. Garnish with chopped green onion. Serves 4.
